Auro approaches every variety and every harvest from a different perspective to bring out the special characteristics of the terroir.
Saloy is a community of just under 2100 inhabitants, which is part of Davao City, on the southern Filipino island of Mindanao. Davao was once the centre of cocoa cultivation. Saloy is actually far outside the Davao city limits and lies within a mountainous tropical forest.
Flavour notes: herbs, bergamot and cherries.
Ingredients: cocoa beans, cane sugar, cocoa butter.
