Milkchocolate with kefir

Domantas says: “Kefir is the victory of milk over time. In Lithuania, we have a centuries old traditon of making kefir, a true culinary heirloom product. Kefir contains high levels of probiotics, caused by the benign bacteria and yeasts which ferment the milk. The kefir-mother is inherited by the next generation to ensure this fizzy milky drink survives. I decided to create something authentic and unorthodox by mixing kefir with chocolate. The living micro-organisms ensure this chocolate ripens like good cheese – its taste will develop over time. How timeless is that?

Forager Collection

Chocolatier Domantas Uzpalis says: “The Forager Collection is extremely complex and contains many layers. First, I separate all the ingrediens, and then I recombine them to create a chocolate bar with – I would say – patented flavours. Unique. With this collection I have developed a new way to combine intensely tasteful local products into chocolate bars, in which by nature the complex aromas of cocoa are already present.”

The cocoa beans Domantas uses come from El Ceibo, Bolivia.
