Description
The cocoa beans for this chocolate are harvested in wild forests of the Amazon basin in Bolivia. In the region Cochabamba, two indigenous peoples (Yuracaré and Chimanes) have joined forces to set up an association aiming to help their peoples deal with their decreasing resources, caused by deforestation. One way of doing that is to work with nature to harvest high-quality cocoa beans. The beans are FairWild certified which ensures they are grown and harvested in a nature friendly way.
The cocoa harvesters use boats to travel along the Chapare river. They harvest the ripe cocoa pods from wild islands. Then, they transport the beans by canoe and on horseback to the processing station, where they are fermented and dried. Harvesting takes place only once a year – the rest of the year, the trees and the islands are left in peace, and nature takes back control.
Tasting notes: nutty and woody, with a long aftertaste of yellow and red fruits, followed by honey and creaminess.
