“Almendra Blanca” translates to “white almond”. The white color of this special cocoa bean gives the finished bar a lighter look despite its high cocoa content. c

This special white cocoa comes from the 30 hectare estate, used by Agrofloresta for training courses of indigenous smallholder farmers participating in the Selva Tabasqueño project. In 2014 Hugo Francisco Chavez and his friends started Agrofloresta Mesoamericana to convert a degraded terrain into a diverse cocoa forest, which has been used as a demonstration farm for organic cocoa growing in an agroforestry system using local timber tree species.

On the farm ten local cocoa varieties are grown, resulting from decades of selection of native cocoa trees. They now represent some of the best Criollo Tabasqueño cocoa, commonly known as Almendra Blanca because most of these cocoas have white beans.
As some Criollo Tabasqueño cocoas with purple beans have also shown outstanding flavor characteristics, the farm does not only preserve white seeded cocoas, so that the final batches have about 70% white beans.

Availability is limited to volumes around 1 ton/year. From the 2021 harvest only about 400 kg went to Europe.
